Butter (it is easier than you think)

Ingredients:

  • 2–3 cups heavy whipping cream (cold)

  • Optional: pinch of salt (for salted butter)

Instructions:

  1. Pour the cold heavy cream into your stand mixer bowl and attach the whisk attachment.

  2. Mix on medium speed. The cream will first become whipped cream—continue mixing.

  3. After several minutes, the mixture will separate into butter solids and buttermilk. You’ll see clumps forming—this means it’s ready.

  4. Strain the mixture using cheesecloth to separate the butter from the buttermilk (you can save the buttermilk if desired).

  5. Transfer the butter into an ice bath and gently press or knead it to help remove any remaining liquid.

  6. If making salted butter, mix in a pinch of salt to taste.

  7. Shape as desired and store in an airtight container in the refrigerator.
