High Protein, High Fiber Blueberry Loaf!

Ingredients:

  • ½ cup plain yogurt (full fat)

  • 3 eggs

  • 1 tbsp vanilla extract

  • 1 cup sugar

  • 2 tsp baking powder

  • 1½ cups all-purpose flour, plus 1 tbsp (for coating blueberries)

  • ½ cup avocado oil (or vegetable)

  • 2 cups fresh or frozen blueberries

  • 3 tbsp chia seeds

  • 1 serving unflavored protein powder (I use Vital Proteins collagen—1 serving = 4 tbsp)

Instructions:

  1. Preheat your oven to 350°F.

  2. In a large bowl (or blender), combine the yogurt, eggs, vanilla extract, sugar, baking powder, flour, avocado oil, chia seeds, and protein powder. Mix until smooth and well incorporated.

  3. In a separate bowl, toss the blueberries with 1 tbsp of flour to prevent them from sinking. Gently fold the blueberries into the batter.

  4. Line a loaf pan with parchment paper or lightly grease it. Pour the batter into the prepared pan.

  5. Bake for about 50–60 minutes, or until a toothpick inserted into the center comes out clean.

  6. Allow the loaf to cool before slicing. Serve and enjoy!
